Make it a good morning

Do you ever feel overwhelmed by what to eat for breakfast? I swear by my morning smoothie yet I am always looking for simple ways to add in even more servings of fruits and vegetables. Each holiday season, I am reminded of this simple Citrus Salad my mom used to make. I think it's because citrus is in season in the winter months.


You only need 3 ingredients: 1 grapefruit

2 oranges (my fav is cara cara)

1/2 pomegranate


Instructions:


1. Start by peeling the grapefruit and oranges. With the grapefruit slice open the segments so you can pull the meat out of the segments. This is optional, but grapefruit segments tend to be really tough and fiberous so this makes it more enjoyable to eat.

2. With the oranges, just peel the segments apart and slice in 1/2 or thirds.

3. Slice the pomegranate in half. Using kind of an inside out motion, pop the arils lose from the "paper" covering.

4. Once you have everything in the bowl, give it a gentle stir.

5. You are ready to enjoy or refrigerate overnight.
