Garlic Rubbed Cabbage Steak

Until a couple years ago, I always hated cabbage. Now, granted I had pretty much only had it raw in coleslaw or boiled. Yuck!

Then I learned about roasting veggies and my world opened up! I now love brussels sprouts (don't quit on me yet!) and cabbage. This recipe from Everyday Maven is so simple and delicious. Okay, but why bother to try a cabbage recipe in the first place. I mostly think the darker the food, the more health benefits. And cabbage is basically white on the inside. And then I learned that white foods are great for the immune system. Garlic, anyone? Remember too that cabbage is in the same family as broccoli, kale, which I think we can all agree are superfoods. So like it's cousins, cabbage is rich in B6, folate, fiber, antioxidants and vitamin C. Huh, sounds like stuff my body needs right now. Did you know that cabbage

  • anti-bacterial, anti-fungal, and anti-viral

  • builds muscle

  • cleans the blood

  • strengthens eyes

  • rich in iron and sulphur
